No Bake Chocolate Cookies

3 cups rolled oatmeal
¾ c honey
2/3 c sunflower butter
½ c coconut oil
1/3 c coco powder
1/3 c unsweetened coconut
1 tsp vanilla extract
¼ tsp salt


  1. Line 2 baking sheets or cutting boards with wax paper.

  2. In a medium saucepan, combine honey, coconut oil and sunflower butter. Cook over low until smooth.

  3. Add in oats. coco powder, coconut, vanilla extract and salt.

  4. Stir well.

  5. Place spoonful of batter onto wax paper and let site about 10 minutes.

  6. Enjoy


Cinnamon Baked Apples with Whipped Cream

Cinnamon Baked Apples with Whipped Cream

cinnamon baked appleNothing smells better than cinnamon apples cooking in the oven, especially on a cold day! This simple recipe is low in sugar and amazingly delicious! Adding fresh whipped cream gives it a little extra richness that kids love!

Ingredients - Baked Apples:
4 medium apples (granny smith, gala or braeburn
1/3 C maple syrup
¼ C Graham crushed crackers
1/3 C oatmeal
2 T butter, softened
1 tsp ground cinnamon
½ tsp grated lemon zest
¼ tsp ground nutmeg
½ C apple juice
3 T Honey
1 T Lemon Juice

Prepare the night before:

  1. Preheat oven to 350 degrees
  2. Cut and core apples, use a melon baller to make it fun! You can also cut apples in half for additional servings. Peel ½” wide strip at top of each apple. Place in water with lemon juice to prevent browning (oxidation).
  3. In food processor pulse graham crackers, oatmeal, maple syrup, butter and cinnamon.
  4. Place apples in an 8X8 baking dish.
  5. Mix apple juice, honey and lemon juice in a small sauce pan, warm.
  6. Fill each apple with graham cracker filling then pour the apple juice mixture over the top.
  7. Bake uncovered for 20 minutes (baste every 5 minutes).
  8. Serve warm or cool with pan juices
  9. Add fresh whipped cream or ice cream for an extra treat!

  • Apple: is a member of the pear family. The skin comes in many colors; red, yellow or green. The US grows more than 25 varieties of apples, from very tart (granny smith) to very sweet (golden delicious). Apples are great source of vitamin C, pectin and fiber. One study even shows it can help patients manage Type-2 diabetes.  Cinnamon contains iron, potassium, zinc, calcium and magnesium. Vitamin A and vitamins from the B group are also found in sticks.

  • Maple Syrup is a wonderful natural sweetener! This clear sap is extracted from Acer trees found in northern North America. Maple syrup is a great substitute for sugar, especially in fall recipes because of it’s rich flavor. Maple syrup has calcium, potassium, iron, and is  also a good source of mineral manganese and zinc.
